i'm starting sailing club this thursday, just curious, if any of you have ever been sailing, what do you think of the sport?

Wow. this is much too late to help you, hope it worked out ofor you. I had a great time the summer I livied in the Boston area joining the Charles River community Boating club. A great club where I felt very accepted at the only blind person at the time, something I don't experience often. And I enjoyed learning to sail. The big thing is learning to tell where the wind is coming from which is hard for sighted people also so they put little falgs on top fo the sail and watch which direction they are pointing iin. Apparently, veteran sailers do what I was taught to do wwhich is wet your figer, yeah, stick it in your mought or spit on it, and hold it in the wind. but most of the time I found I could turn my head and since it was summer and hot I would always have sweat on my face and fairly easily pick up the wind with my face alone. A very cool natural blind sport. It would have been nice to try it out of a crowded river where the issue was usually needing someone to tell me how to stay away from the other boats.
